In a traditional Indian kitchen, some never-fail recipes are handed down from generation to generation. Incorporating all of the basic spices and old-world techniques, they are actually quite simple to prepare. We will learn to make classic recipes representative of each region of India: rava sheera (sweetened semolina dessert with cardamom and nuts), a popular offering to a very popular god Krishna; kobichi bhaaji (a delectable stir fried cabbage dish from Western India); tadka dal from the North (lentils cooked with tomatoes, chilies, and spices), served with steamed rice; and onion and spinach pakora (finger-licking fritters served with store bought date chutney). This class is a combination of demonstration and hands-on cooking.
Tuition includes all food fees. Please bring several containers to take home finished dishes, and if you like, an apron.
Sandhya Rege Nadkarni has been teaching public and private cooking classes for more than 12 years. She creates content and develops authentic Indian and innovative fusion recipes for her popular blog INDFUSED @indfused.com, which also offers branded online products, including spices and recipe kits. Her focus has always been to create healthier, streamlined, delicious recipes with easily available ingredients.
