Chinese Kitchen: Scallion Pancakes 蔥油餅

Any dim sum meal or order of Chinese takeout should never feel complete without cong you bing (scallion pancakes). Crispy and flaky on the outside and soft and chewy on the inside, this appetizer is the ideal starter for any Asian feast. We’ll make our own by mixing and kneading the dough, incorporating a chopped green onion filling, and pan-frying our delicious layered pancakes in oil the way it is done in many Chinese homes.

Michael Monis

Michael Monis is a 4th grade teacher at the Cyrus E. Dallin elementary school in Arlington. He is passionate about working with children and strives to create a positive classroom environment where students will not only grow but be engaged with their learning. Michael possesses a degree in Chinese language, history and culture, and has spent years teaching at several schools in Boston’s Chinatown and working closely with the Chinatown community. He is also the volunteer coordinator on the board of Bamboo Circle, a Chinatown group that organizes cultural events and fundraises to support the Asian immigrant populations in and around the Boston area. Michael also teaches online ESl classes to dozens of children throughout China.
