How-to Basics of Indian Cooking

Explore behind-the-scenes techniques to make fresh, preservative-free yogurt, protein-rich sprouted beans, ghee (clarified butter), and fermented batters for a gut-healthy diet. Learn how to make these ingredients through demonstration, and then we will incorporate them into a meal by cooking together as a class. We will make sprouted bean salad and vegetable uttapams (savory pancakes); curried potatoes smeared with yogurt, crushed peanuts, and spice; and a dessert called gol-papdi that is made with whole wheat flour sautéed in ghee and Indian jaggery (brown sugar).Tuition includes all food fees. Please bring several containers to take home finished dishes, and if you like, an apron.

Shruti Mehta is a native of India and a cooking enthusiast. Shruti enjoys teaching others how to prepare Indian vegetarian dishes, and has taught cooking courses for several adult education programs.
